Super healthy pizza with cauliflower crust!

If like me, you’ve tried to pay attention to what you eat, but cannot resist pizzas, this recipe is made for you! I know, when I tell you that this is a cauliflower pizza crust, you are already imagining something tasting pretty bad… not at all! This pizza tastes SO good and is very healthy!


Say goodbye to normal pizzas’ carbs and try this cauliflower pizza crust now! This will help you follow your diet goals while keep eating things you like. Because nobody can say no to a good pizza! And… on top of that, it is so easy to make!


Super healthy cauliflower pizza crust!


For the crust
1 cauliflower head
2 eggs
3 tablespoons of grated Cheddar cheese
2 tablespoons of grated Parmesan cheese
1 tablespoon of Italian herbs
Salt and black pepper
Olive oil


To garnish the pizza
A few baby spinach leaves
5 cherry tomatoes
…g of pumpkin
1/2 green capsicum
Tomato sauce
Fresh basil leaves
Red pepper flakes or chili powder
2 slices of bacon or ham
Fresh Bocconcini cheese (5 balls)
1 tablespoon of Italian herbs
Salt and black pepper
1 tablespoons of grated Cheddar cheese
1 tablespoons of grated Parmesan cheese

  1. Preheat the oven to 200 degrees Celsius.
  2. Cut and wash the cauliflower and use a mixer or food processor to ground the cauliflower into rice cauliflower.
  3. Put the grounded cauliflower in a microwave-safe bowl, cover the bowl and place into the microwave for 6 minutes. Let the cauliflower cool down.
  4. Then use either a clean dish tower or some cheese cloth to drain the water from the cauliflower. Remove as much water as you can from the cauliflower by pressing the cauliflower in the tissue.
  5. Using the same bowl as before, stir the two eggs, the cheddar, the Parmesan and the Italian herbs. Add salt and pepper.
  6. Add the drained cauliflower to the bowl and stir to make the paste homogeneous.
  7. Prepare a baking paper that will go to the oven and put 2 table spoons of olive oil on it. Use your fingers to spread the oil to cover entirely the baking paper.
  8. Spread the cauliflower paste on the paper and cook in the oven for 10 minutes.
  9. In the meantime, in a pan, add some oil, and cook the capsicum and pumpkin finely sliced. Add after 5 minutes the mushroom and cook another 5 minutes. If you are using bacon, cook the bacon with the vegetables.
  10. Remove the crust from the oven, and top with the tomato sauce. Add the ham (or cooked bacon) cut into pieces, the pumpkin, capsicum and mushroom, the spinach leave, the slices Bocconcini, the cherry tomatoes cut in half.
  11. Cover with the Cheddar and the Parmesan cheese, and spray on top of it some Italian herbs, salt, pepper, and red pepper flakes (or chili powder).
  12. Bake in the oven for 15 minutes.
  13. Cut in 8 portions. And voila!

For an even healthier version, reduce the portion of cheese added at the top. You can also do your own pizza version and replace the vegetables with other ingredients.
